Personally, I was concerned about the adversarial relationship between cook and judges, since food is more about sharing and caring... but there is some good comedy in this, and these judges aren't all that mean spirited... so it works pretty good.
I get the feeling that Mark has an encyclopedic knowledge of cooking styles, and a James Bond nerve about trying new things, so this is all appealing to my creative wild side.

Those potatoes look good on the side, but I also find it to be my favorite add-in within the egg itself. It rounds out the egg to my tastes because an egg tends to have some texture issues that seem to disappear when you add the potato. Could just be me.

Mexican is good ideas (Avocado, Tomato) and Bad ideas (gobs of cheap Cheese) mixed together. This guy adds more sensitivity and comes up with the best of both worlds. Kudos.
I am sure that everything this guy makes is delicious, from what I can tell, but this recipe doesn't feature gobs of heavy cream, and he rendered the bacon, so this would also be, as far as I can tell, a healthy meal.. kind of a reverse salad - instead of a salad with dressing, this is a like a yummy dressing with a bit of salad thrown in!
I am looking forward to your posting the recipes so I can try these at home.

Yeow, that looks good. Joe is so down to earth... you can tell he is cooking for and teaching with real people in mind. What a great show. I'm looking forward to trying the omlete with the Spinach, and I think the whole butterflying of the chicken opens up worlds of endless possibilities.
One thing I like to do with a chicken breast is to bake it with a little bit of Sesame oil on it.
It is way smart that you look at the meal from the flavor, cost, nutrition, ease and attractiveness angles together in a balanced, natural approach.

I'm not sure why everyone wants to cook the wine down. If you pour wine right over spaghetti it makes a great sauce in its own right without any other ingredient. But of course, the Spinach and garlic and all are great too.
I think this guy has paid proper respect to the speed limits (health signals) without launching over to the "eating socks because they are healthy" Camp)..
